Exploring Colorado for the week visiting grandparents. We tried out this restaurant in Parker. A bit dissappointed. I don't think this would count as authentic vietnamese food but more of a vietnamese american fusion food. The pho doesn't have much of the pho taste and smell.

Unfortunately the restaurant we chose was closed on Sundays so we ended up at Pho Viet for dinner. We all had a different version of pho and I was a minority in my opinion that the pho was just OK, whereas everyone else liked their pho. I gauge the pho from the first sip of broth to taste the richness, then I taste the texture of the noodles.
